ABSTRACT
The article features several Turkish restaurants in the U.S. It offers information on the menu selections at these restaurants aimed to keep up with the authentic Turkish cuisine. Caf� Istanbul's menu selections and many of their components are made from scratch, including the yogurt. Mike Isabella, chef at Zaytinya, focuses on classic flavors and ingredients, preparing dishes traditionally but elevating them with high-level techniques and presentation.
