According to Joseph, he did not encounter any of the pitfalls where minorities are concerned. He points out that his major responsibility as a chef manager is to ensure that he produces a quality product. The bane of his day is paperwork, Joseph notes. He believes in the importance of having a diverse staff in the foodservice industry.
