ABSTRACT
This article explores the practice of vegetarian cookery in India. It highlights the popularity of spices for preparing vegetarian cuisine. It also notes the popularity of hot food with coconut and tamarind in southern India. It adds that many vegetable dishes in Indian cuisine begin with a paste of garlic and ginger.
