ABSTRACT
The article reports on the Earth Day-themed menu offered by the Garden Café, the main cafeteria of the University of Medicine and Dentistry of New Jersey-The University Hospital in Newark, New Jersey. Betty Perez, director of nutritional services, says the menu was about the garden and orchard way of eating. The menu included shrimp with pearl couscous and red grains and herb summer squash soup.
