ABSTRACT
The article provides information on the China Olympics launched by Alan Roteman, director of dining services at the CherryWood Village in Portland, Oregon, to reduce the number of broken dishes. According to Roteman, breakage is inevitable, but there was a significant reduction in replacement costs during the competition.
