This article describes the child-friendly design of Kay Kafe at St. Jude Children's Research Hospital in Memphis, Tennessee. The new design is circular with more stations than before, which eases congestion significantly, says Cathy Weaver, director of foodservice. Bold, graphic signs and digital menu boards are also new additions to the space. With the redesign, the use of display cooking has increased and additional staff was hired to man the stations.
