ABSTRACT
The article focuses on the topics discussed by consultant Ian Crabtree during a South West Rural Update conference in Exeter, England in June 2008. According to Crabtree, the food service sector is ripe for innovation and local food and drink could be the next big thing. He said that the food service sector was notoriously fragmented and difficult to get into. The food service sector was the fourth largest market in Great Britain and was growing by 15% a year.
