Production of protein hydrolysates in an enzymatic membrane reactor

The article focuses on the production of protein hydrolysates in an enzymatic membrane reactor. Researchers selected thermolysin as catalyst over subtilisin due to the strong inhibition of the latter. The enzymatic membrane reactor model with a complete retention of the enzyme and a partial retention of the substrate in the reaction zone was used for enzymatic reaction. They found that the substrate conversion degree could increase by 50% at a high substrate retention.
