New gene helps raise milk quality

The article reports on a discovered gene which is claimed to boost the quality of milk destined for cheese. It states that World Wide Sires UK and Milk Link are promoting the naturally occurring Kappa Casein BB Gene to farmers in the south-west as bringing significant benefits to dairy farmers. According to Kathryn Clemens, agricultural manager at Milk Link, studies show cows carrying the Kappa Casein BB gene produce 8% more cheddar-type cheese than those without.
