The article reports that foodservice operators in the U.S. are diversifying their catering options by turning to delivery and/or pick-up catering services. At Massachusetts General Hospital, staff assemble boxed lunches, along with other catering orders, and deliver to the departments around the hospital or package lunches for customers to pick up and take with them. At the University of Notre Dame in Indiana, the catering department offers a special student catering menu, which includes pricing for boxed lunches, delivery and pick-up.
