ABSTRACT
The article focuses on the initiative of Dean Wright, director of dining services for Brigham Young University in Provo, Utah, in designing a facility to reduce its environmental impact. For the university's refrigeration, they switched from water-cooled units to air-cooled units, which uses less water. In the dairy production area, they monitor all the waste water that goes into the city's sewer. They also work very closely with the city environmental engineers on issues related to waste water treatment and composting.
