The article focuses on the initiative of Damian Monticello, corporate food service liaison for Blue Cross and Blue Shield of Florida, in Jacksonville, to open up a full barista coffee shop named Perks. Since the contractor uses the Java City coffee brand, Perks is a departure, Aramark General Manager Frank Raulerson explains. Monticello is not concerned that Perks will cannibalize cafeteria sales, since participation studies show that the fewest number of people visiting the cafeteria come from these two buildings.
