ABSTRACT
The article reports that Cornell University of Ithaca, New York has opened a vegetarian/vegan restaurant in partnership with Moosewood, the famous local vegetarian restaurant. Moosewood at Anabel Taylor opened at the beginning of this semester. At least 80% of the food is vegan and more than 50 percent is organic. There are three entrees featured daily, with more planned. One soup, such as creamy tomato and corn chowder, hearty mushroom barley and Tuscan white bean and vegetable, is offered daily; a second will be added as the weather gets colder.
