Making a Show of It Fair and Festival Food

This article examines fair and festival food and how food stands are chosen for events. Sue Stoecklein of the Kansas State Fair reviews the menus of every concession to make sure all the standard foods are represented. She also believes there should be a couple of surprises for the customers each year. Stoecklein addresses the need of food to be easily portable so the customers can eat while strolling. Food presentation and cleanliness are also vital factors in winning a place on the midway.
