ABSTRACT
The article focuses on shot glasses desserts being served at Universal Parks and Resorts in Orlando, Florida. Steven Jayson, corporate executive chef at the park, remarks that these desserts became popular because a lot of their guests want very quick service and they are sweet indulgence in a petit way. He relates that working with little martini glasses, they do about 7 or 8 different flavors of desserts, such as chocolate zabaglione and carrot cake.
