The article reports on the use of surveys by foodservice directors to communicate with their consumers. Surveys have long been used by non-commercial foodservice directors to uncover a wealth of information, from menu preferences and service issues to otherwise undetectable problems. But today, foodservice operators also are using surveys in various ways, as a lobbying aid, an educational tool and even as a way to promote their operations, the author said.
