ABSTRACT
The article reports on the transformation of the sports bar and restaurant, the Power House, into a fast-casual restaurant. According to executive director of dining services Pat Foley, the other aspect of lunch service was that everyone seemed to come to the restaurant at the same time, adding to the challenge of full service. As originally designed, the Power House is a two-level, 200-seat restaurant that features a bar at the front of the main level and a stage for live performances.
