According to Jack and Barclay Taylor of Webscot Farm in Shrewsbury, England, Brown Swiss serves as a good option for those wishing to produce milk fit for cheese making and processing. The natural traits of Brown Swiss, coupled with a complex ration to maintain both high fat and protein levels produces what processors want.
