Early in January 2007 at the University of Portland, Oregpn, Bon Appetit switched all of its coffee campus-wide to the Nossa Familia brand. The reason for the change, according to human resource manager Becky Veatch, has as much to do with philosophy as it does with product quality. She says that the firm's philosophy is based on sustainability. She adds that with the Farm to Fork program, they are trying to use more local shops.
