ABSTRACT
The article presents information on marketing strategies of food service operators in selling ethnic food to customers. At Yuma Regional Medical Center in Arizona, Sodexho's executive chef Carlos Ochoa shares his expertise in creating flavors from his own Puerto Rican heritage, as well as influences from the Italian restaurant his parents operate. At Tipton Hospital in Indiana, assistant food service manager Andre Lipari and chef Patty Sheward introduce customers to ethnic foods by taking a one day tour each month.
