ABSTRACT
The article highlights the celebration of the Black History Month at Fordham University in New York, held on February 13, 2007. Fordham University Dining Services, managed by Sodexho, invited Calvin Jenkins, a chef with Sylvia's Restaurant, to do exhibition cooking with Fordham executive chef Michael DeMartino. The lunch featured recipes from Sylvia's Restaurant, and owner Sylvia Woods visited the Marketplace to meet the staff.
