ABSTRACT
The article discusses the endorsement of Mediterranean diet as a source for healthy menu ideas. The Culinary Institute of America and Harvard School of Public Health plan to release the report "Principles of Healthy Menu Research and Development," that aims to endorse the Mediterranean diet. With its focus on variety, freshness and lots of fruits and vegetables, breads and grains, beans, nuts and seeds, the Mediterranean diet is right in tune with contemporary lifestyles and nutritional concerns.
