ABSTRACT
The article profiles John Turenne, founder of Sustainable Food Systems based in Wallingford, Connecticut. Turenne served as executive chef for Aramark at Yale University. His accomplishments included the original design, development and implementation of the Yale Sustainable Food Project. Moreover, he believes that foodservice operators must have a clear idea of what the term sustainable food means.
