ABSTRACT
The article reports on the popularity of chef's tables which became prized and pricey and found on mezzanines overlooking the kitchen. Typically they demand extra work from an already overtaxed kitchen. In New York City, where dinner at Alain Ducasse costs $230 per person with tax and tip but not wine, the tab for the chef's table, known as the Aquarium, is $500 including wine. That bill includes predinner champagne and a cookbook signed by Ducasse.
