Founded in 1993, the group seeks to help chefs make knowledgeable purchasing decisions, embrace seasonality, preserve diversity and traditional practices, and support local farmers. Co-founder Rick Bayless said, that although Chefs Collaborative have some similar goals as some environmentalists, its interest is really on great flavors and strong agricultural economies.
