ABSTRACT
The article focuses on the decision of the Compass Group not to purchase fish species that are considered endangered in the U.S. The company collaborated with the Making Waves Project to develop purchasing standards, internal compliance mechanisms and chef training. Its division Bon Appetit Management Co. has also established sustainable seafood purchasing practices. The purchase of tilapia is not restricted as it is cost effective and loved by the customers.
