ABSTRACT
The article presents the responses of food service operators in the U.S. about renovated or novel facilities they will be opening in fall 2006. The challenges of renovating the Hickey Dining Hall at Saint Bonaventure University in Olean, New York are outlined by Anthony Criscone, district manager at Aramark. The remodeling of the cafeteria at Good Samaritan Hospital is described by Deborah Gervin, director of nutrition services at the facility.
