This article examines unique 21st century challenges and issues being faced by agriculture in the U.S. while continuing to feed people in the U.S. and much of the world. Organics are a growing force in agricultural production. U.S. sales of organic food and beverages have grown from $1 billion in 1990 to an estimated $14.5 billion in 2005. Flavor is another area being studied.
