This article reports on a wide variety of dairy-based choices added by Stony Brook University Hospital in New York to its menus. Yogurt parfaits have turned out to be a great alternative there. Layered with yogurt, granola and fresh fruit or IQF products when out of season, the parfaits are pre-assembled for quicker production. Frozen novelties are also popular, especially single-serve ice cream, mini sundaes and flavored ice cream bars.
