This article provides information on the 2006 American Society for Healthcare Food Service Administrators conference which was held in June in Napa Valley, California. To open the conference on a humorous yet inspirational note, words of wisdom were delivered by Bertice Berry, award-winning entertainer, lecturer and comedienne. In his presentation, The Physiology of Taste, Bill Briwa, instructor at The Culinary Institute of America at Greystone, issues a warning to operators who aim to menu healthy food in response to customer or administrator imperatives.
