ABSTRACT
This article reports on the changes in the cafeterias at the two hospitals operated by Allina Hospitals & Clinics. According to Julie Butner, regional VP for Morrison Management Specialists, Allina's foodservice provider, the Spice Café allows them to offer customers things they have not had before, such as exhibition cooking. Morrison's Spice Café features 17 different retail-style concepts that can be switched out on a regular basis to enhance the dining experience for regular customers.
