School pizza dough rises 25%

The article reports the increase of pizza sales at Glenview School District in Illinois by 25% after the installation of combination of oven/steamers. The equipment reduced the cooking time of pizzas by half. Kimberly Radzinski, director of the school district's foodservice, replaced the burner stoves with combination convection oven/steamers. Radzinski admitted that she did not expected the difference in food quality that was caused by the equipment.
