ABSTRACT
The article presents ways to increase iron absorption from plant foods and eggs. These include serving Vitamin C-rich foods at all meals, adding small amounts of lean meat, fish or poultry to dishes made with plant foods or eggs and cooking with cast iron or stainless-steel cookware. Ideas for boosting iron in menus, such as preparing kebobs with chicken or beef and Vitamin C-rich vegetables, are also presented.
