ABSTRACT
This article focuses on the 4th annual FoodService Director MenuDirections conference, which presents an examination of how non-commercial operators can adapt commercial concepts to fit their needs. Two two concepts are developed and tested specifically for the conference. The project involves Ron Ehrhardt, director of food services for Prudential, teamed with Dave Hoemann, VP of marketing and creative services for Compass Group, to bring a line of Wolfgang Puck salads to Prudential's employee cafeteria customers
