ABSTRACT
The article profiles Indian woman chef Sukhi Singh, whose efforts to bring the varied and complex flavors of Indian cuisine in the U.S. She has achieved her goal of developing Westernized versions of these dishes so they can be authentically, consistently, quickly and easily reproduced in non-commercial kitchens.
