This article highlights the Worlds of Healthy Flavors conference sponsored by the Culinary Institute of America (CIA) and Harvard School of Public Health's Department of Nutrition as of March 2006. Sessions were grounded in solid scientific research presented by the nutrition experts from Harvard and several other leading centers of learning. The outcomes of numerous, well-respected, decades-long studies were reported and interpreted by the experts in attendance, but it was no surprise that diabetes and, by extension, obesity, were the subjects of much discussion.
