ABSTRACT
The article discusses the author's experience with searching for perfectly cooked beans. In Tuscany, Italy, people cooked beans all night in a wine bottle set into the embers of a fireplace. The author had the opportunity to eat small bowls of fresh white beans that had been cooked with fresh sage leaves and garlic in a trattoria in the town of Pescia, Italy. The author shares the advice that cookbooks, chefs and food scientists give for cooking dried white beans.
