This article discusses the importance of sustainability efforts, according to Marc Zammit, director of culinary support and development for Palo Alto, California-based Bon Appetit Management Co. Zammit urges the food service industry to think about the issue of losing local flavors when losing farms and, since 1980, more than 300,000 small farms have disappeared. He asserts that sustainability is driven by consumers, and future consumers, who want to know more and more about where their food is coming from.
