This article highlights the results of a survey on healthcare food service management presented at a conference of the National Society for Healthcare Foodservice Management in the U.S. in August 2005. Nearly three-quarters of operators agree that their customers are satisfied with their offerings. Thirty percent of respondents are using a broader restaurant-style menu than in the past, while more than 80 percent feel that customers are looking for more ethnic flavors and varieties when they venture into hospital retail operations.
