This article presents views of retail food industry expert Phil Lempert on the nutritional and demographic trends that will affect the business of convenience stores over the next decade. The first thing retailers need to realize, Lempert explained, is that the society is currently in the "experience phase" of its economic progression, in which products are props, services are a stage and the experience is more important than the product. Most importantly, retailers will be selling information as much as product. He cited first the example of the aging population, in which the number of people aged 45 to 54 will increase 37 percent between 2000 and 2010, and the number of people aged 55 to 64 will increase 63 percent.
