ABSTRACT
This article provides information on the Umenohana restaurant opened by Umenohana Co. Ltd. in Southern California. If you subscribe to the theory that Southern California is the birthplace of many restaurant trends, better keep your eye on the new Umenohana in Beverly Hills. It is a 140-seat fine dining spot whose soybean-based cuisine features tofu served amid seasonal themes. Sound a little, well, specialized to make it in the U.S. market? Do not bet against its backers. Owner Umenohana Co. Ltd. is a publicly traded restaurant company that has 72 Locations in Japan. The company says it already has expansion plans for tofu spots in San Francisco, Newport Beach and Pasadena, California, and New York City.
