ABSTRACT
The article provides information on the quantitative determination of nitrofuran metabolites in complex food matrixes through triple-quadrapole LC-MS-MS. The presence of nitrofuran residues in food products is a major human health concern, because they can cause cancer and genetic defects. 5-Nitrofuran drugs have been widely used as feed additives to prevent bacterial enteritis in animals. It was discovered that residues of nitrofuran antibiotics occurred in fish products, for example shrimp and catfish, originating from South-East Asian countries. Although, in principal, analysis of nitrofuran metabolites can be performed by liquid chromatography with different detection techniques, e.g. UV, MS, MS-MS, EU regulations require multiple reaction monitoring based on one precursor ion and two product ions for unequivocal identification of analytes. The requirement for quantitative results at sub-ppb concentrations in very complex matrixes reinforces the need for a powerful analytical technique which fulfills these criteria.
